Earl Grey Waffles

I officially turned older a few days ago..

& I am so thankful that one of the gift I received was a....(drum-rolls!)

waffle-maker (gasps!).

It is a Belgian Waffle Maker by L'equip, imported from Korea.

so once I got it, within hours, I searched for a waffle recipe & got my hands on this new baby!

In light of Valentine's Day which is only 4 days away....
this recipe is also for all the sweethearts out there.

boy, this is good stuff.

waffle in the making !

separate 1 egg

beat the egg white (to stiff peaks) & yolk (to a creamish mix) separately, with 1/2 the sugar respectively

beat in the milk to the egg yolk cream
beat in the water, as well
sift in the dry mixture
stir in the melted butter
fold in the egg white

earl grey waffle batter

oh the beauty of waffles,
added some pink colouring into 1/2 of the batter for a valentine touch ;)

Makes 3 1/2 waffle (each waffle has 4 pieces)

Ingredients
- Egg, 1, seperated
- Sugar, 2 tablespoons
- Milk, low-fat, 1 cup
- Water, 1/4 cup
- Flour, self-raising, 1 1/4 cup
- Salt, a pinch
- Earl grey tea leaves, 1 bag
- Butter, 55g, melted

Methods
1. Beat egg whites to medium-stiff peaks with a whisk (you may use an electric mixer, it would be faster, I used a whisk because it is Chinese New Year eve & I wanted to have as little stuff to wash as possible, ha), add in 1 tablespoon of sugar and whisk till stiff.
2. Beat the egg yolks with remaining sugar till creamy.
3. Beat in the milk & water to the creamy egg yolk.
4. Sift in the dry ingredients (flour, salt, tea leaves), mixing well.
5. Stir in the melted butter.
6. Fold in the stiff egg white.
7. Preheat waffle maker to the highest temperature setting.
8. Once ready, pour in 3/4 cup of batter and cook:

Soft Waffle: 2-3 minutes
Crispy Waffle: 4-5 minutes
Extra Crispy Waffle: 7-8 minutes

9. Use a tong to remove the cooked waffle and transfer to a wire rack to cool.
10. Enjoy it warm or freeze for up to 2 months

I had mine with pomegranate ice-cream which I whipped up Dec 2012 & sprinkled some pom seeds over. Delicious !!

How was it?
- waffle had perfect grooves mostly on 1 side, the other side was mostly flat but with squares imprints.
- earl grey taste was pretty flat, didn't come through

Better it up!
- use 1 cup of batter
- use 2-3 bags of tea leaves

The Verdict
