Mister Fudgy with an Oatsy Twist

Baking mister fudgy,
is really easy !
rich & oh-so-chewy,
great with milk for a mid-day munchie!

i love this recipe. it's so simple & quick to do. but i had to give it a bit of a tweak so i reduced the butter & sugar & throw in some oats/wholemeal flour. i must say, i'm more than pleased with this makeover. but as always....it can only get better! so tweak tweak tweak !

2 trials - oats vs wholemeal flour

both batch tasted the same to me but some of my friends who tried it felt that the wholemeal flour one had an aftertaste to it.



my dearest girl who helped with rapid cooling of mister fudgy in the freezer so then we could slice it in the nick of time. it was the night that we were throwing our friend a surprise birthday party and we were running a little bit late. 0.0


Makes 16 fudgies

Ingredient
Butter, 100g
- Sugar, 250g
- Cocoa, 75g
- Salt, pinch 
- Vanilla essence, 5ml
Rum essence, 5ml
- Eggs, 2
- Plain flour, self-raising, 35g
Oats (quick-cooking) or Wholemeal flour, 35g 

Methods

1. Preheat oven to 160ÂșC.
2. Line an 8x8-inch baking pan.
3. Mix butter, sugar, cocoa & salt in a big microwaveable bowl.
4. Microwave for 1 minute on high (1000watts) and stir.
5. Microwave for another 1 minute and stir until butter has melted - mixture would look gritty.
6. Allow to cool slightly before adding the vanilla and rum essence, stirring to combine.
7. Add in the eggs (one @ a time) and beat vigorously after each addition - batter would look shiny
8. Stir in the flour until well-blended and beat the mixture vigorously for 30 seconds.
9. Pour batter into baking tin and decorate the top (if you would like).
10. Bake on the lowest rack for 25 minutes.
11. Remove and bake on the middle rack for 10 minutes.
12. Allow to cool completely before slicing into 16 squares.

How was it?
Gooey. Fudgy. Yummy. Note that the slicing of the brownie might take a bit of effort - the brownie tends to stick to the knife so I had to wipe the brownie off before slicing again. 

Better it up! 
Use 100% oats instead of plain flour.
