Hot Dark Cocoa

be it the high or the low,
fast days or slow,
through the sun or snow,
with a friend or foe,
whether you're clueless or you know,
if you're happy or in woe,
somedays...all you need is a hot cocoa,
for that warm glow,
yo.


Makes 2 mugs

Ingredients
- 1 tablespoon cocoa
- 1 tablespoon unsweetened dark chocolate chips
- 2 tablespoons sugar
- 1/4 cup water
- pinch of salt
- 2 cups soy milk, unsweetened

Methods
1. Combine cocoa, chocolate chips, sugar, water and salt in a saucepan over medium heat.
2. Stir constantly until mixture boils.
3. Allow to simmer for 1 minute.
4. Stir in milk and allow to heat through for 1 minute (keep stirring).
5. Serve in 2 mugs.

How was it?
Soy milk hot cocoa tasted interesting...but I bet it would taste much better with low fat milk which I've ran out off, but soy would work for those of you who are lactose intolerant. Bitter-sweet but a tad too sweet for my liking even though I've reduced the sugar. Love the bitterness cause' then you know there's the goodness of cocoa! My bestfriend liked it...but could be more chocolatey for me. 

Better it up!
Replace sugar with maple syrup.
Replace soy milk with low fat or skimmed milk.
